Banana Buckwheat Pancakes

I made these pancakes a couple of weeks ago and they are yummy, really easy and ofcourse healthy. Great for breakfast or lunch.

They are already delicious on their own, but with all kinds of toppings, you can spice them up a little and give them your own twist. Let’s get started:

For the pancake batter I used:

  • 1 egg
  • Half a banana
  • 40 grams of buckwheat flower
  • A small amount of almond milk (but you can use any kind of milk you prefer)
  • 1 teaspoon of cinnamon
  • a pinch of ground ginger
  • a pinch of salt

Simply mix all the ingredients in a bowl, heat some coconut oil in a pan en spoon the batter in the pan. Turn when the pancakes start to get bubbles on the top and appear less shiny. Stack your pancakes on a plate and start adding your toppings.

The toppings I chose are:

  • Coconut yoghurt
  • My home made Buckwheat granola (recipe is on my blog as well)
  • Blueberries
  • And ofcourse some extra cinnamon
